I many times like to write by hand because the pressure I apply on the paper indicates better how strong or light I feel about a subject.
Also, I like color coding my writing. Doing this with either colored pencils or pens is a lot easier than choosing a palette of 16-bit colors. I've come up with my own system, e.g., green for money, pink for health, purple for mystery, etc. Others tell me they create their own system that radiates with passion for them, that others pick up in the final work.
Low-tech is sometimes a great timesaver, ironically. Ideas being so elusive, they and their essence have to be captured immediately. There's also no GUI that gets in the way.

Good stuff! One thing that I do when I'm writing is flip the "offline" switch on my email so that it doesn't interrupt me. Oh, and instant message systems are the kiss of death for productivity! :-)
